what happens if I skip the final leg of a one-way flight and stay in the city where the first leg stops?
I  want to fly from LAX to Dallas, tickets are $40 cheaper if I ticket to  Houston. The flight stops in Dallas.  What happens if I don't take the  second leg and get off in Dallas?  I will not check any luggage.

If you miss the second flight, you are SOL. Why would you do that, Houston is hours from the Ugly Dallas

You'll  simply be shown as a no-show for the 2nd sector.  If it's only a one  way ticket you shouldn't have any problems, although if you go for a  return, your problems start the minute you miss the flight to Dallas, as  the rest of the trip will be cancelled.

If you, as  explained here you buy a OW (one-way) the most that can happen is that  the airline charges you the difference to your credit card.  BUT, if you buy an R/T (return ticket), the moment you miss one leg the  whole itinerary is cancelled! And considered forfeited.

Assuming  the plane stops at the gate to allow passengers off and on (not just  for fuel), and you have all your carry-on items, nothing will happen.  Just make sure that Dallas is the stop on the one-way flight and you'll  be fine.
